Over time, New Orleans has transformed from French and Spanish to Caribbean and African and all of those cultures together. Remoulade and étouffée or a humble pot of red beans and rice, New Orleans is a Creole City. From the grand dames of New Orleans fine dining to the gas stations outside of Lafayette, eating is communal, peeling crawfish as common place as arguing over the color of the roux.
