Flo’s Pizza

Flo's Pizza

Ingredients
  1. 1 basic pizza dough (recipe below)
  2. 1 8 oz. can pizza sauce (recommend Pastorelli’s)
  3. 1 lb Italian sausage
  4. ½ lb Scamorza cheese
  5. ½ cup diced green peppers
  6. ½ cup sliced green olives (about 15 queen size)
  7. 1 teaspoon dried oregano
Basic Pizza Dough Ingredients
  1. 1 package active dry yeast
  2. 1 cup warm water (105-115 )
  3. ½ teaspoon salt
  4. 2 teaspoons olive oil
  5. 3 cups all purpose flour
Instructions
  1. Preheat oven to 350.
  2. Roll out pizza dough to form long rectangle, large enough to cover large rimmed sheet tray. Spread pizza sauce evenly over dough. Spread cheese and dot with sausage. Spread green peppers and olives. Sprinkle with dried oregano.
  3. Bake for 25-30 mintues or until golden brown. Remove, let stand for 5 mintues. Cut into rectangles.
Basic Pizza Dough Directions
  1. Dissolve yeast in warm water in mixing bowl. Add salt, olive oil and flour. Attach bowl and dough hook to mixer. Turn to low and mix until dough forms and cleans the sides of the bowl. Place dough in greased mixing bowl, turning to coat completely. Cover.
  2. Let rise in warm place, free from draft, about 1 hour, or until doubled in bulk. Punch and let rise another hour.
Notes
  1. A steel rimmed sheet tray, not-nonstick or aluminum works the best to produce the crispy crust.
