Ham and Potato Chowder

Ham and Potato Chowder

Ingredients
  1. 3 1/2 cups diced potato (I leave skin on)
  2. 1/3 cup diced celery
  3. 1/3 cup diced onion
  4. 1 cup diced carrot
  5. 1-2 cup diced ham
  6. 3 1/4 cups chicken stock
  7. 1 teaspoon salt
  8. 1 teaspoon ground black pepper
  9. 5 tablespoons butter
  10. 5 tablespoons flour
  11. 2 cups milk
  12. 2 cups shredded cheddar
Instructions
  1. Combine potatoes, celery, carrots, onion, ham and broth in
  2. stockpot and bring to boil. Cook over medium heat until
  3. potatoes are tender - approximately 15-20 min. Stir in salt and
  4. pepper.
  5. In separate saucepan melt butter over medium low heat. Whisk in
  6. flour and stir constantly until thick. Slowly add milk as not to
  7. allow lumps to form. Increase heat to medium and stir until
  8. thickens (4-5 mins).
  9. Add cheese and stir until melted. Stir cheese mixture into
  10. stockpot and cook until heated through. Soup thickens as it cools.
