Sloppy Jose with Avocado Crema and Roasted Poblanos

Avocado Crema Ingredients
  1. ½ cup cilantro, leaves and stem tops only
  2. ¼ cup sour cream
  3. 1 avocado
  4. 1 lime, zested and juiced
  5. Salt and pepper to taste
Sloppy Jose Ingredients
  1. 1 pound Mexican chorizo
  2. 1 pound ground pork
  3. 1 Tablespoon cumin
  4. 1 Tablespoon chili powder
  5. 1 medium onion, small dice
  6. 1 green pepper, small dice
  7. 1 16 oz can tomato sauce
  8. 2 Tablespoons brown sugar
  9. 1 Tablespoon spicy mustard
  10. 1 Tablespoon Worcestershire sauce
  11. 1-2 large chipotle pepper in adobo sauce, diced fine
  12. 8 hamburger buns or 16 slider buns
Instructions
  1. Avocado Crema:
  2. Combine all ingredients in food processor or blender until smooth. Taste and adjust. Cover with plastic wrap pressed directly on top of the crema to keep from browning.
  3. Sloppy Jose
  4. Brown chorizo and ground pork in a large skillet along with the cumin, chili powder, salt and pepper. Add onion and green pepper, saute until softened. Add tomato sauce, brown sugar, mustard, Worcestershire, and chipotle. Simmer all ingredients until pork and chorizo are cooked through and all flavors have melded. Taste and adjust. Serve on buns with avocado crema, roasted poblanos, and Chihuahua cheese if desired.
