30-Minute Chicken Gumbo June 11, 2015 by Jill Foucre Leave a Comment 30-Minute Chicken Gumbo 2015-06-11 07:50:15 Serves 4 Print Ingredients 3 T. vegetable oil 1/3 cup flour 2 red bell peppers, chopped 1 medium onion, chopped 4 garlic cloves, chopped 1 t. oregano salt and pepper 10 oz. frozen cut okra 8 oz. smoked Andouille sausage, halved lengthwise and sliced ¼ inch thick 1 roasted chicken, skin and bones removed, meat shredded (4 cups) Instructions In a 5 quart Dutch oven, heat oil over medium heat. Add flour and cook, whisking constantly, until pale gold, 5-7 minutes. Stir in bell peppers, onion, garlic, and oregano; season with salt and pepper. Cook stirring occasionally, until vegetables are crisp-tender, 10-12 minutes. Add 4 cups water; stir in okra and sausage. Bring to a boil. Stir in shredded chicken, and warm through, 1-2 minutes.
