Rosemary White Bean Chowder December 30, 2020 by Jill Foucre Leave a Comment Rosemary White Bean Chowder 2020-12-31 01:45:39 Print Ingredients 2 tablespoons Extra Virgin Olive Oil 1 yellow onion, diced 4 cups chicken or vegetable broth, low sodium 1-2 tablespoons s.a.l.t. sisters Herbes de Provence with Sea Salt 12 ounces unpeeled red potatoes, diced 2 ½ cups coconut milk 1/3 cup flour 1 can Cannellini beans, drained and rinsed 2-3 ounces kale, chopped Instructions In a large pot, heat the EVOO. Add the onion and sauté until tender, about 5 minutes. Stir in the broth, Herbes de Provence, and potatoes; bring to a boil. Turn the heat to low and simmer for 30 minutes. In a medium bowl, add the coconut milk and flour, whisk until combined. Once the broth has simmered, stir in the milk and flour mixture along with the Cannellini beans. Turn heat up to medium until it reaches a boil, then reduce heat and simmer until potatoes are tender. Add the kale and cook until wilted, about 3-5 minutes. Serve hot. Chickpea and Kale Curry October 15, 2019 by Jill Foucre Leave a Comment Chickpea and Kale Curry 2019-10-15 21:19:34 Print Ingredients 2 teaspoons olive oil 1/2 cup chopped red bell pepper 1/3 cup chopped yellow onion 3 cups chopped lacinato kale 2 teaspoons minced garlic 1 tablespoon garam masala (optional) 1 teaspoon curry powder 1/2 teaspoon ground cumin 1/2 teaspoon kosher salt 1/4 teaspoon black pepper 1 tablespoon creamy peanut butter 1-1/2 cups unsweetened coconut milk (refrigerated or canned) 1 cup chickpeas, drained and rinsed 1 tablespoon fresh lime juice Cilantro springs Instructions Heat oil in large, nonstick skillet over medium heat. Add bell pepper and onion; cook until softened, about 5 minutes, stirring occasionally. Add kale and garlic; cook until kale is softened; about 2 minutes. Stir in curry powder, cumin, garam masala, salt and pepper. Add peanut butter; stirring constantly for 30 seconds. Stir in coconut milk and chickpeas. Cook, stirring occasionally until sauce begins to thicken slightly; 12-14 minutes. Remove from heat; stir in fresh lime juice. Sprinkle with cilantro sprigs. Salt and pepper to taste. Tofu and Cashew Lettuce Cups May 23, 2019 by Jill Foucre Leave a Comment Tofu and Cashew Lettuce Cups 2019-06-20 01:00:17 Serves 4 Print Ingredients 2 tablespoons Canola oil 14 ounce package firm tofu: drained and cut into 1-inch squares 2 cloves garlic, minced 1 tablespoon grated ginger 1 bunch scallions, trimmed and sliced 1/2 cup shredded carrots 1 8-ounce can sliced water chestnuts; drained and chopped 1/3 cup roasted unsalted cashews; chopped 2 cups cooked brown rice 1 small head of Bibb lettuce, leaves separated Sauce 1/4 cup soy sauce 1/4 cup honey 1 tablespoon Asian chili sauce Combine ingredients in a small bowl and set aside Instructions Heat oil in a large skillet or wok over medium-high heat. Cook garlic and ginger until golden and fragrant, one minute. Add tofu, stirring occasionally until browning begins, about three minutes. Add the scallions and carrots and cook for one minute. Stir in water chestnuts and soy mixture. Cook until heated through, about 3 minutes (if needed, thicken with 2 t. cornstarch dissolved in two tablespoons of cool water). Roasted Vegetable Salsa August 9, 2018 by Jill Foucre Leave a Comment Roasted Vegetable Salsa 2018-08-09 13:31:05 Print Ingredients 5-6 ripe tomatoes 2 jalapeño peppers 2 red bell peppers 2 red onions 2 cloves garlic ¼ cup cilantro 2 tablespoons olive oil salt and pepper, to taste Juice from 1 lime 2 tablespoons cider vinegar Instructions Preheat oven to 425 degrees. Slice all the vegetables in quarters. Toss with olive oil and season with salt and pepper. Place all the vegetables on a baking tray and roast them in the oven for ½ an hour. Remove the vegetables from the oven and let them sit for a while to cool down. Peel the tomatoes and peppers. Remove seeds from jalapeño, to likeness of heat. Place all the vegetables in a food processor or a blender and pulse until the salsa is the consistency you like. Place in a bowl and add lime juice and cider vinegar. Vegan Pumpkin Gnocchi with Cheesy Vegan Basil Pesto January 11, 2018 by Jill Foucre Leave a Comment Vegan Pumpkin Gnocchi with Cheesy Vegan Basil Pesto 2018-01-11 14:14:52 Serves 4 Print For The Gnocchi 1/2 cup pumpkin puree 3/4 cup gluten free flour (add more as needed) 1 chia egg (1/2 tablespoon chia mixed with 1 and 1/2 tablespoon water) 3 tablespoons nutritional yeast 1 tablespoon olive oil For the Cheesy Pesto 3 cups packed basil 1/2 cup walnuts 1/2-3/4 teaspoon salt 1/2 teaspoon minced garlic 2 teaspoons lemon juice 2 tablespoons hemp seeds 4 tablespoons nutritional yeast 3/4 cup extra virgin olive oil For the gnocchi In a small bowl sprinkle chia seeds over water. Let sit for 5-10 minutes until thickened. In a large bowl combine pumpkin puree, nutritional yeast, chia egg and flour. Mix until dough form. Form dough into 4 balls and roll out into long thin thread (using more flour as needed). Cut into one inch segments and lightly press down on each one with a fork. Bring a pot of water to a boil. Add salt to taste. Add gnocchi. Cook for 2-4 minutes. Remove from pot. Heat pan over medium heat and add 1 tablespoon olive oil. Lightly pan fry each gnocchi until browned. Serve with vegan basil pesto. For the pesto To a food processor add basil, walnuts, salt, garlic, lemon juice, and hemp seeds. Process on high while slowing pouring the olive oil through the feed chute. Scrape down the sides of the bowls during the process. Add nutritional yeast and blend for another few seconds.
