Chocolate Chip Oatmeal Cake with Cherries

Ingredients
  1. 1 3/4 cups boiling water
  2. 1 cup McCann’s Quick Cooking Irish Oatmeal
  3. 1 cup brown sugar
  4. 1 cup granulated sugar
  5. 1/2 cup butter
  6. 3 large eggs
  7. 1 3 /4 cups flour
  8. 1 t. baking soda
  9. 1 T. baking cocoa
  10. 2 cups semi-sweet chocolate chips
  11. 1/4 cup cherries*, chopped
  12. 3/4 cup chopped walnuts (optional)
Instructions
  1. Preheat oven to 350°F.
  2. Pour the boiling water over the oatmeal; let stand for about 10 minutes. Add the sugars and butter. Stir until butter melts. Add the eggs and mix in well.
  3. Mix in flour, baking soda and baking cocoa.
  4. Now add about half of the semi-sweet chocolate chips and all the cherries. Mix.
  5. Pour batter into greased and floured 9" x 13" baking dish.
  6. Sprinkle walnuts (if using) and remaining chocolate chips on top.
  7. Bake for 40 minutes or until a skewer inserted in center comes out clean.
Notes
  1. *You can use dried, canned or frozen cherries
