Green Goddess Dip

Green Goddess Dip

Ingredients
  1. 1 bunch watercress, washed, spun dry, stems removed and discarded
  2. 1 cup (tightly packed) fresh basil leaves
  3. ½ cup (tightly packed) coarsely chopped fresh chives
  4. 1 large clove garlic, peeled, trimmed and chopped
  5. freshly grated zest of 1 lemon
  6. freshly squeezed juice of 1 lemon
  7. ½ cup mayonnaise
  8. ¼ cup sour cream
  9. 2 anchovy filets
  10. salt
  11. freshly ground black pepper
Instructions
  1. In the work bowl of a food processor fitted with the steel blade combine the watercress, basil, chives, garlic and lemon zest. Pulse until chopped.
  2. Add the lemon juice, mayonnaise, sour cream and anchovy filets. Process until smooth. Season to taste with salt and freshly ground black pepper.
  3. Transfer to a bowl and serve with fresh vegetable crudités.
