Roasted Onion and Blue Cheese Dip October 2, 2014 by Jill Foucre Leave a Comment Roasted Onion and Blue Cheese Dip 2014-10-02 09:35:05 Print Ingredients 2 large yellow onions, peeled, trimmed and thickly sliced olive oil salt freshly ground black pepper 1 cup sour cream ½ cup mayonnaise ½ cup crumbled blue cheese Instructions Preheat a ribbed stovetop grill pan over medium heat. Brush both sides of the onion slices with olive oil. Season with salt and pepper. Grill the onions until well browned, caramelized and soft, about 6 to 7 minutes per side. Remove the onions from the pan and allow to cool. Transfer the onions to the work bowl of a food processor fitted with the steel blade. Process until finely chopped. Add the sour cream, mayonnaise and blue cheese. Process until smooth. Season to taste with salt and pepper. Transfer to a bowl and serve with fresh vegetable crudités.
