Smoked Salmon Coulis
  1. 8 oz. smoked salmon, finely diced
  2. ½ cup diced cucumber
  3. 1-2 Tablespoons chipotle pepper, finely diced
  4. ½ cup red onion, finely diced
  5. Salt and pepper
  6. ¼ cup spicy tomato juice
  1. Combine all ingredients and chill at least 4 hours or overnight. Serve with crackers, toast points, or over mixed greens or fill endive with the mixture.
