Cover and pulse until the mixture resembles coarse meal. Drizzle water over the flour mixture until the dough starts to form small clumps. Turn the mixture out onto a work surface and knead lightly together to form a ball. Wrap the dough in plastic wrap and flatten into a disk. Chill until firm enough to roll, about 30 minutes. To assemble: Preheat oven to 400 degrees. On a lightly floured surface, roll out pastry to a loose 14-inch circle; transfer to parchment paper lined baking sheet. Top with assorted vegetables, drizzle with olive oil, and sprinkle with kosher salt. Fold pastry up around the outside edge, pleating if necessary. Bake for 25-30 minutes Dot with goat cheese and fresh herbs, and continue baking for 10-15 minutes until cheese is bubbly and crust is golden brown.
