Zucchini and Gruyere Tarte Tatin
  1. 1 sheet puff pastry, thawed
  2. 4 zucchini, sliced into 1 inch thick slices
  3. 1 cup gruyere cheese, shredded
  4. 1 Tablespoon olive oil
  5. 1 onion, julienned
  6. Salt and pepper, to taste
  1. Preheat oven to 425 degrees.
  2. In a 10 inch sauté pan over medium-high heat add in olive oil and onion. Cook until the onion begins to caramelized, about 8-10 minutes. Season with salt and pepper. Add the sliced zucchini in placing it cut side down. Allow the zucchini to cook about 3-5 minutes. Without stirring add the shredded cheese over the top of the zucchini. Turn the heat off.
  3. Roll the pastry dough out to fit in the sauté pan. Add the pastry over the top of the sauté pan and place in the oven until golden brown, about 6-8 minutes.
  4. Remove from the oven and allow to cool slightly. Flip the tart on to a cutting board or serving platter and slice to serve.
