Sauteed Quinoa with Swiss Chard September 8, 2014 by Jill Foucre Leave a Comment Sauteed Quinoa with Swiss Chard 2014-09-08 09:54:11 Serves 6 Print Ingredients 8 ounces bacon, finely diced 4 large cloves garlic, peeled and chopped 1 medium yellow onion, peeled and chopped 2 yellow bell peppers, stemmed, seeded and chopped 1 bunch Swiss chard, washed, trimmed, stems removed, leaves cut into ¼-inch thick slices Salt Freshly ground black pepper 4 cups cooked red quinoa 1 tablespoon olive oil Instructions 1. In a large sauté pan cook the bacon over medium heat until it is lightly browned and has rendered its fat, about 8 to 10 minutes. Add the garlic and cook for 30 seconds. Add the onion and peppers and cook until the onion is lightly golden brown, about 8 minutes. 2. Add the Swiss chard and cook until it is tender, about 7 minutes. Season to taste with salt and freshly ground black pepper. 3. Stir in the cooked quinoa and olive oil and sauté for 1 minute. 4. Taste and adjust seasonings. 5.
