Fricassée of Brussels Sprouts and Bacon

Fricassée of Brussels Sprouts and Bacon
Serves 4
  1. 1½ pounds Brussels sprouts, trimmed and cleaned
  2. 4 slices bacon, cut crosswise into ¼-inch pieces
  3. 2 T. olive oil
  4. ½ t. salt
  5. ½ t. freshly ground black pepper
  1. Using the slicing disc on the food processor, cut the Brussels sprouts into ¼-inch thick slices.
  2. Warm a large skillet over high heat. Add the bacon and olive oil. Cook for 2 to 3 minutes, until the bacon is crisp and brown and most of the fat has been rendered. Add the Brussels sprouts, salt and pepper. Stir to combine. Cover and cook for 1 to 2 minutes to soften the sprouts. Uncover and cook over high heat, stirring occasionally, for about 2 minutes, or until the sprouts are tender but still a bit firm.
  3. Serve immediately.
