Green Bean Salad with Lemon, Feta & Dill

Ingredients
  1. 1 pound fresh green beans, cleaned
  2. 1⁄2 cup feta cheese, crumbled
  3. 1⁄2 cup pine nuts, toasted
  4. 1⁄2 lemon, juiced (or 1 T. lemon juice)
  5. 2 T. white balsamic vinegar
  6. 3 T. extra virgin olive oil
  7. 1 t. honey
  8. 1 t. fresh dill
  9. Salt and freshly ground pepper
Instructions
  1. Steam green beans until tender crisp. Rinse under cold water and drain. Set aside.
  2. In a small bowl, whisk together lemon juice, vinegar, oil, and honey. Add salt and pepper to taste. Add dill.
  3. Toss green beans in dressing* and add feta and pine nuts. Serve immediately.
Notes
  1. *add the dressing gradually. Unused dressing can be stored in a sealed container in the refrigerator for a week.
