The Cangshan KITA Series 5" Santoku Knife brings the best of Japanese knife design to the KITA collection — a compact, highly maneuverable blade built for slicing, dicing, and chopping fruits, vegetables, and meats with fluid, efficient strokes. The hollow edge creates small air pockets between blade and food, dramatically reducing surface resistance and preventing ingredients from sticking as you cut. Forged from 67 layers of proprietary X-7 Damascus steel with a hammered full-tang finish, the blade is hand-sharpened to a razor edge and built to hold it. The KITA Series octagonal G-10 fiberglass handle with mosaic rivet provides a balanced, comfortable grip, and the included Saya-style magnetic sheath keeps the blade protected between uses.
