Blackcurrant Vinegar Made with 100% Fruit Juice

Pojer e Sandri’s single-fruit vinegars are not your typical fruit vinegars, which are usually made by infusing wine vinegar with fruit flavors or essences. Instead, Pojer e Sandri start with locally sourced blackcurrants from the Martello Valley grown by the winery’s neighboring farmers. The fruit is gently pressed and its juice is inoculated with yeast to ferment. When the fermented fruit juice achieves the right sugar content, it is transferred to oak barrels with some “mother” vinegar—a process known as the trucciolo lento method—and aged for 18 to 24 months.

The result? A balanced vinegar bursting with freshly picked fruit and a sharp, yet not-too-sour bite.

How to use

Use it to enhance meats or wild game—try it in marinades for steak or pork, drizzle over roasted quail or add a splash to a pan sauce for crispy chicken thighs.

This vibrant vinegar also makes a delightful addition to beverages and icy libations. Add Blackcurrant Fruit Vinegar to soda water for a refreshing warm weather drink or shake up a one-of-a-kind cocktail—muddle a couple blackberries with a spoonful of sugar and a splash of the fruit vinegar, add a shot of gin, crushed ice and top off with sparkling water.

Red Wine Vinegar from Trentino-Alto Adige, Italy

With a body reminiscent of a great Pinot Noir, this red wine vinegar is robust and tangy with notes of late-harvest raisins and dried apples, and a subtle woodsy finish. 

Pojer e Sandri's Red Wine Vinegar is produced from a blend of local Blaufränkisch, Zweigelt, Negrara, Groppello, and Pinot Nero grapes that reflect the ephemeral, cool mountain environment of the Dolomites. After spending a minimum of 18 months aging in oak barrels, this vinegar is elegant, balanced and versatile.

How to use

Pojer e Sandri's Red Wine Vinegar is ideal for dressing radicchio or arugula salads, grilled vegetables or tannic vegetables, such as artichokes. Swirl over hearty stews to add a pop of bright flavor and or use to deglaze pork or meat roasts.

White Wine Vinegar from Trentino-Alto Adige, Italy

Made from local Dolomiti grape varieties, including Sauvignon Blanc, Riesling, Pinot Bianco and Kerner, this white wine vinegar has strong mineral notes reminiscent of the Dolomite granite from which it came, as well as floral tones such as elderberry blossom, acacia and citrus.

How to use

Pojer e Sandri's White Wine Vinegar is ideal for making a lively mayonnaise or salad dressing for delicate and tender greens, such as mache and frisée. You can also use this approachable white wine vinegar for pickling and preserving vegetables, or to make giardiniera and adds a sparkle of brightness to any recipe calling for white wine.
