Chef Brian explores the complex, savory side of chocolate in the kitchen, crafting a luxurious multi-course menu that blends bittersweet cocoa, and spice with bold, full-bodied wines. From silky reductions to espresso rubs, this class showcases how to use chocolate as a flavor enhancer—not just a dessert ingredient.
