Building deep, complex flavors using simple ingredients and classic techniques, Chef Brian guides you step-by-step through the process—from properly searing meats or vegetables, to deglazing with flavorful liquids, to simmering slowly for rich, mouthwatering results. Along the way, he’ll share how to select the best cuts of meat, how to layer herbs and aromatics, and how to balance your dish with acidity and seasoning.
