As cooler days arrive, this class highlights the beauty of fall’s first harvest—think squash, apples, root vegetables, and leafy greens—transformed into a cozy, seasonal meal. Along the way, Chef Clair shares how to layer first autumnal flavors, cook with in-season ingredients, and build filling, delicious vegetarian meals that everyone at the table will love.

Beet, Peach and Chevre Salad with a Pomegranate Vinaigrette

Sweet Potato, White Bean & Israeli Couscous 

Crisp Green Beans With Garlic, Mushrooms and Dijon Mustard Cream Sauce
